Meringues

Eating a meringue is a simple pleasure but they can also be easily jazzed up for any occassion.

Ingredients

  • 2 egg whites
  • 125 g sugar granulated
  • Pinch cream of tartar

Instructions

  • Separate eggs and put the whites in a grease-free bowl and whisk until doubled in size.
  • Add half the sugar and the cream of tartar and keep whisking until combined, white and thick. Whisk in the remaining sugar
  • Place into a piping bag and pipe small meringues onto greasproof paper
  • Place in a low oven and bake at 230-250°F/ 110-120°C /gas 1 for 50 minutes.

Notes

Add a squeeze of food coloring to make festive for special occasions, if desired.
 
I have written this as individual meringues but you can make large circles or rectangles and turn it in a cake with a filling or pavlova etc.
