Traditional Christmas Cake

A traditional British Christmas cake is a fruit cake, it is made months in advance and kept moist by pouring brandy or a liquid on it, wrapped in greaseproof paper and aluminium foil. The joy of decorating the cake each year is a family tradition for us, as everyone has a say in how I should decorate it.

Ingredients

  • 10 oz Currants
  • 8 oz raisins
  • 3 oz sultanas
  • 3 oz cherries
  • 20 oz almonds chopped
  • 20 oz ground almonds
  • 2 1/2 oz mixed peel
  • 6 oz soft brown sugar
  • 5 oz butter
  • 7 oz plain flour
  • 1 tablespoon black treacle
  • 1 rind orange and lemon
  • 1 teaspoon mixed spice
  • 1/2 teaspoon nutmeg
  • 4 eggs

Instructions

  • Beat all ingredients together with wooden spoon. Place in tin, smoothing down with a wet metal spoon.
  • Pour mixture into an 8 inch round cake tin. Place in the middle of oven.
  • Bake for 3 hours at 300 F degrees. Leave in tin for 15 minutes. Place on a wire rack.

Ingredients:

1/2 pint (250 ml) milk

1  1/2 oz (65 g) sugar

1/4 oz (5 g) butter

1 oz (25 g) chocolate (block)

1/2 oz (10 g) cornflour

Method:

1.    Dilute the cornflour with a little of the milk.  Boil the remainder of the milk.

2.    Shred the chocolate, and add to the milk.  Pour a little of the milk on the cornflour.

3.    Return to the saucepan.  Stir to the boil.  Mix in the sugar and butter.

4.    Slightly cool, and serve with your treat of choice.

Strawberry Ice Cream

Ingredients

Ingredients:

  • 1 lb strawberries
  • 1/2 lemon juiced
  • 6 oz icing sugar you can add more or less to your taste
  • 10 fl oz double cream US heavy whipping cream

Instructions

Method:

  • Purée the strawberries in a blender or food processor, then pour them into a bowl and season with the lemon juice and sugar to taste.
  • Stir in the cream.
  • Freeze — churn until the ice cream is ready to serve.
