A traditional British Christmas cake is a fruit cake, it is made months in advance and kept moist by pouring brandy or a liquid on it, wrapped in greaseproof paper and aluminium foil. The joy of decorating the cake each year is a family tradition for us, as everyone has a say in how I should decorate it.

Ingredients
10ozCurrants
8ozraisins
3ozsultanas
3ozcherries
20ozalmondschopped
20ozground almonds
2 1/2ozmixed peel
6ozsoft brown sugar
5ozbutter
7ozplain flour
1tablespoonblack treacle
1rind orange and lemon
1teaspoonmixed spice
1/2teaspoonnutmeg
4eggs
Instructions
Beat all ingredients together with wooden spoon. Place in tin, smoothing down with a wet metal spoon.
Pour mixture into an 8 inch round cake tin. Place in the middle of oven.
Bake for 3 hours at 300 F degrees. Leave in tin for 15 minutes. Place on a wire rack.
