Fresh Homemade Lemonade

Ingredients:

6 large lemons – freshly squeezed

3/4 cup sugar

2  1/2 cups water

fresh lemon slices (thinly sliced or grated zest)

sprigs of fresh mint, to serve

sparkling water, to top up

ice cubes, to serve

Method:

1.    Put the grated lemon peel, sugar, and water in a saucepan and bring slowly to a simmer, stirring to dissolve the sugar.  As soon as the sugar is dissolved and the syrup begins to bubble, take it off the heat.  Half-cover and leave until cold.

2.    Squeeze the lemons and add the juice to the cold syrup.  Strain into a bowl, cover and chill.

3.    Transfer the lemonade to a glass pitcher filled with ice cubes and add the lemon slices and mint.  Dilute with sparkling water on a ratio of about 1 part syrup to 1 part water.

 

Serves 6-8
