Jacket Potatoes Recipe

I find jacket potatoes really delicious – versatile and something you can make easily for 1 or 2 people in a microwave – or lots and lots of people in the oven. Of course, you can put them on the grill (barbecue) or wrapped in foil in the hot ashes of a bonfire.

Microwave Method:

1.  Choose medium-sized potatoes – scrub, then piece skins in several places.

2.  Wrap in paper towel individually.

3.  Cook on full power 5-6 minutes for 1 potato and allow an extra 2 minutes for each additional potatoes.

Oven:

1.  Heat oven to 425/220 degrees. Wash and dry potatoes.

2.  Prick the potato skins in several places.

3.  Place rock salt in the base of the roasting tin, place potatoes on top and bake for 1- 1 ½ hours.

To test if they are ready, insert a skewer easily in and out.
