Mango Pickle

8 lb (3.6 kg) ripe mangos, peeled

pared zest of 1/2 lemon

1/2 oz (15 g) whole cloves

1/2 oz (15 g) whole allspice berries

1/4 oz (7 g) fresh root ginger

1/4 oz (7 g) cinnamon sticks

2 pints (1.1 litres) distilled or malt vinegar

4 lb (1.8 kg) sugar

1.   Cut slices of flesh from the mangos down to the stone, so that each mango provides 10-12 slices.

2.   Place the lemon zest and spices in a muslin bag and secure.  Place the vinegar and sugar in a large pan and heat slowly, stirring continuously, until the sugar is dissolved.

3.   Add the fruit and bag of spices and simmer until fruit is tender but not too soft.

4.   Remove the bag of spices and drain the fruit.  Pack into cooled, sterilized jars.  Pour the syrup back into the pan and bring to a boil

5.   Boil the syrup until it starts to thicken  and then pour over the fruit.  Seal with vinegar-proof tops.  Keep any leftover vinegar syrup and use to top up the jars if necessary, as the fruit absorbs the liquid on standing.  Allow to mature for at least a month before use.
