Microwaved Strawberry Jam

Ingredients:

 

1 1/2 lb (675 g) strawberries

1 1/2 lb (675 g) caster sugar

Method:

1.    Place fruit in a large bowl and cook on full power for 5 minutes.  Stir and mash the fruit.  Cook on full power for a further 10 minutes.

2.    Add the sugar and stir to dissolve.  Continue to cook for 2 minutes on full and stir well.  Remove any scum.

3.   Cook for 3 minutes and test for a set.  Continue cooking for 1 minute and testing in intervals, if necessary, until setting point is reached.

4.    Pour into cooled, sterilized jars, seal and label.
