Royal Icing

An icing that turns hard when it dries, ideal for decorating cakes and cookies

Ingredients

  • 1 lb 450g icing sugar
  • 2 egg whites
  • 1 teaspoon lemon juice

Instructions

  • Sift the icing sugar twice. Place the egg whites in a bowl and whisk very lightly. Add half the icing sugar and the lemon juice and stir until mixed.
  • Gradually beat in the remaining icing sugar until the required consistency is obtained. If possible, leave the icing overnight before use. Flavor and color as desired.
