Sharp Lemon Slices

This recipe is quick and easy, tastes delightful and makes plenty! Ideal for a house full of events or take to a party.

Ingredients

  • Ingredients:
  • 4 eggs 1 level tbsp baking powder
  • 9 oz 250g soft butter 6 tbsp milk
  • 9 oz 250g canter sugar Grated rind 2 lemons
  • 12 oz 350g S.R. flour
  • Icing:
  • 12 oz 350g large sugar
  • 5 tablespoon lemon juice

Instructions

  • Measure all the ingredients into a bowl and beat well for 2 minutes until smooth. Line a large roasting tin and put it all in.
  • Bake for 30 minutes at 350 degrees. It should be spongy to touch and the side shrinking in. Leave to cool in tin.
  • Make the icing by warming the lemon juice, mix in icing sugar and beat until smooth. You can add more lemon juice, if needed. Spread on cake and leave to set. Enjoy!
