
Ingredients
- 1 lb 500 g tomatoes
- 8 oz 250 g cooking apples
- 4 oz 100 g caster sugar
- 4 oz 100 g onions
- 1 tsp 5 ml salt
- 6 cloves
- 2 pieces root ginger
- 12 peppercorns
- 2 chillies
- 1/4 pint 150 ml malt vinegar
Instructions
- Chop tomatoes and apples roughly, including the skin and cores. Peel and chop onions. Place ingredients together in a pan, cover and simmer until soft.
- When softened add the vinegar, sugar and spices and simmer, covered for a further 30 minutes. Sieve and return to pan.
- Simmer without lid for 15 minutes to thicken. Pour into hot, sterilized jars and place in a simmering water bath for 30 minutes. Seal and label.
