4eggs 1 level tbsp baking powder
9oz250g soft butter 6 tbsp milk
9oz250g canter sugar Grated rind 2 lemons
12oz350g S.R. flour
Icing:
12oz350g large sugar
5tablespoonlemon juice
Instructions
Measure all the ingredients into a bowl and beat well for 2 minutes until smooth. Line a large roasting tin and put it all in.
Bake for 30 minutes at 350 degrees. It should be spongy to touch and the side shrinking in. Leave to cool in tin.
Make the icing by warming the lemon juice, mix in icing sugar and beat until smooth. You can add more lemon juice, if needed. Spread on cake and leave to set. Enjoy!
