1 cookie cutter I like to theme the cookie cutter to the season. look for mini cutters when you are out
Ingredients
12oztuna in oil, you can use any fish in oil
2eggs
1tbspcoconut oil
2cupscoconut flour
Instructions
Preheat oven to 325°F
Pulse the tin of undrained, canned tuna, in a food processor to chop as finely as possible
In a stand mixer, combine al the ingredients together, including the fish paste, until you have a firm but rollable dough . If the dough is too dry, add coconut oil, a teaspoon at a time. If it's is too wet or sticky, add a bit more flour. The dough should be pliable.
Roll dough on a floured surface until about 1/4-inch thick. Use a mini cookie cutter in the shape of your choice to create your treats
Place treats on a parchment-lined baking sheet and bake at 325°F for about 20 minutes. When they're slightly browned and crunchy, they're done
Once cool, keep in an airtight container for up to 2 weeks
Notes
You do not need to use a cookie-cutter, you can use a pizza wheel and create a criss-cross pattern, just be aware to keep the treats a similar size, or they will cook at different rates.If your oven is not a convection model, then you will need to increase the heat to 350°F, but check the treats from 18 minutes onwards.When you roll out the dough, use a non-wooden rolling pin, so the aroma of fish can not penetrate the rolling pin. If you have to use a wooden one, wash it quickly after rolling to preserve the integrity of the wood.
